Mini Orange Cakes with a Vanilla Buttercream Swirl


Since moving to England 3 years ago I have definitely moved onto the tea drinking bandwagon. Part of that tea drinking bandwagon is cake. Sounds awful I know. No, not every tea needs to be accompanied with cake. With that in mind, tea and cake go together like cookies and milk. These mini orange cakes are perfect for afternoon tea. Their smaller size makes them feel a bit less naughty. I would suggest pairing these beauties with Early Grey or Lady Grey as these teas have lovely citrus notes. A breakfast tea is perfectly acceptable. Or the only acceptable tea for cake if you ask my boyfriend. I guess he is English, but I'm stick with my Early Grey. 

Ingredients 

Cake 

175g softened butter
140g caster sugar
2 medium eggs 
140g flour 
50g of ground almonds
1 tsp baking powder
1 tsp vanilla extract 
zest of 2 oranges, 1/2 an orange for the cake, 1 1/2 for dipping 
juice of 2 oranges 
100g granulated sugar 

Buttercream 

110g of butter
190g of icing sugar
1 tsp vanilla extract
1-1 1/2 tbsp of cream 
  1. Cream the butter to add lots of air. It should turn a light shade of yellow. 
  2. Slowly add the icing sugar until it has fully combined with the icing sugar. 
  3. Add the vanilla and 1 tbsp of cream, whisk together. 
  4. Add more cream depending on the consistency. To pipe on the cake, you need firm peaks.
Baking Time!

  1. Preheat the oven to 180C or 160C fan. 
  2. Line a pan (approximately 20x20cm) with parchment paper. 
  3. Cream together the butter and sugar until fluffy and light.
  4. Add the eggs, vanilla, zest and 1/2 an orange's juice. Most likely the mix will curdle but do not be alarmed! 
  5. Add the baking powder, flour and almonds. 
  6. Whisk together on a high speed for about 5 minutes until the mixture is full of air. The mixture should no longer be curdled now that the dry ingredients have been added. 
  7. Bake in the middle of the oven for 25-35 minutes or until a knife comes out clean. 
  8. Let the cake cool and then remove it from the pan. 
  9. Cut off the edges of the cake and the cut into 16 small squares. 
  10. Apply some orange juice to the top and sides of the cake either by dipping very carefully or using pastry brush. 
  11. Then sprinkle or dip the cakes into the granulated sugar. 
  12. Finally pipe on the buttercream frosting and add some orange peal for garnish. 

Sweet Potato and Roasted Tomato Risotto



Ingredients V

300g of risotto rice 
200g of sweet potato, chopped into small squares (about 1 cubic cm) 
1 large glass of white wine
5-6 sprigs of fresh thyme 
250g of cherry or plum tomatoes 
1 tablespoon of balsamic vinegar
olive oil 
1 small red onion 
1 poblano chili (deseeded) 
1L of chicken stock 
1 large clove of garlic 
sea salt and pepper 
parmesan for serving (optional) 

Preparation 
  1. Preheat the oven to 160C fan or 320F bake. 
  2. Wash the tomatoes and place on a lined packing pan. Drizzle with olive oil and add the balsamic vinegar. Combine everything. Sprinkle generously with sea salt and black pepper. Place 4 sprigs of thyme on top (Remove the thyme when finished baking).
  3. Bake in the oven for 20 minutes. When finished set aside. 
  4. Begin preparing the risotto whilst the tomato bakes. 
  5. Finely chop the remaining sprigs of thyme (leaves only), the red onion chilli and the garlic. 
  6. Saute the thyme, onion, chilli and garlic for approximately five minutes. 
  7. Add the sweet potato. Brown for about 5 minutes on a medium high heat. 
  8. Add the rice to the pan and mix it in with all the juices and oils for approximately 5 more minutes. 
  9. Then, add the wine and let simmer until all the wine has been absorbed by the rice. 
  10. At this point, you can beginning adding the stock 1/3 at a time. Stir continuously from this point on.  
  11. You should add the next third when all the liquid has been absorbed by the rice. 
  12. The whole process should take 15-20 minutes. Once the time is up, taste. If it is not soft yet, it will need to cook for longer. Add about 300ml more stock and then repeat the process. 
  13. The risotto is finished when loose and creamy but not wet!
  14. At this point, add a tablespoon of butter and the tomatoes plus the juices, balsamic and oil. 
  15. Let the risotto sit for 5 minutes then serve! Drizzle some extra balsamic on top if you like. 
  16. Enjoy :) 
Serves 3-4. 

White Chocolate and Raspberry Cupcakes


These cupcakes are surprisingly not too sweet as the fresh raspberries really cut through the sweetness. I would say they are best served with a hot of cup tea. I hope you enjoy this decadent recipe :) 

Ingredients 

For the Cupcakes 

150g of flour
1 tsp of baking powder
1/2 tsp of baking soda
a pinch of salt
4 tbsp of unsalted butter, room temperature
1 large egg
80g of white chocolate
1 large punnet of raspberries
a sprinkle of coconut (optional)

For the White Chocolate Frosting 

150g of white chocolate
100g of butter, unsalted and room temperature
250g of icing sugar
1 tablespoon of milk



Preparation 

Cupcakes 

  1. Preheat the oven to 180C or 160C fan. 
  2. Cream together the butter and sugar on a high speed. It should be light and fluffy, whisk for about 2-3 minutes. 
  3. Add one egg and combine well until it forms a wet, yellow batter. 
  4. Sift in the flour, baking powder, baking soda and salt in three intervals. Alternate the with milk. 
  5. Grate, shave or cut the white chocolate into small pieces. 
  6. Fold in the white chocolate using a spatula. 
  7. Scoop into a lined cupcake tin. 
  8. Bake for 15-20 minutes or until well risen but not browned. 
  9. Let the cupcakes cool for about 30 minutes. Then scoop out the middle using a cupcake corer or a spoon. 
  10. Fill the cupcakes with the raspberries and then pipe on the frosting. 
  11. Sprinkle on the coconut flakes as soon as you pipe on the frosting. 
  12. Enjoy! 
White Chocolate Frosting 
  1. Cream together the icing sugar and butter on a high speed. It should take about 2-3 minutes and the final mixture should be a lighter shade than the original butter. 
  2. Melt the chocolate at 30 second increments until fully melted. Let it cool slightly.
  3. Add the chocolate into the butter/icing and whisk together. 
  4. If needed add the milk. The whisk should form a trail in the frosting. If you take out the whisk a soft peak should be formed on it. 


Swedish Pancakes!


It was my 20th on Sunday and I wanted pancakes. Therefore, I made pancakes! I could have let my boyfriend make them buuuuut I wanted to cook. Surprise, surprise. Swedish pancakes are close to crepes but easier; in my opinion anyway. Beware, they are addictive and not very filling. We had five each, yum.

Ingredients 

200ml of flour
2 eggs
200ml of milk
a pinch of salt

Cooking Time!
  1. Combine the flour and half the milk using an electric or traditional whisk. You do not want lumps!
  2. Add the rest of the milk and the eggs. 
  3. Mix again. 
  4. Heat your frying pan to a medium-high heat. I used 12 out a possible 14 heat setting. 
  5. Once the pan is hot, add about 1 tsp of butter. Let it melt and spread it about so that it covers the whole pan. Add more butter if necessary. Repeat this stage for each pancake. 
  6. Pour a thin layer of the pancake batter and spread to the edges. If you feel like you did not put in enough, add some more in but quickly!
  7. The pancake is ready to flip when you see bubbles starting to appear and the top appears dry. 
  8. Cook the other side of the pancake for about 2 minutes or until golden brown. Make sure to check at the minute mark. 
  9. Serve with your favourite topping!
Traditionally, you are supposed to eat these pancakes with whipped cream and jam. In my family though we also have them just with plain jam, sugar, butter and sugar and sometimes nutella. . However, you could even have these savoury with ham and cheese. They are pretty blank canvas. My family spreads our topping of choice on half the pancake, then roll them up as shown below. 



Serves 2-3. Approximate cooking time 15 minutes (for all pancakes). 

Spiced Carrot Cake


I love carrot cake, but I have only ever made carrot cupcakes. Since I was having friends round for dinner I thought I should make a cake for dessert. I am so glad I chose to try a carrot cake because it was delicious! Everyone had seconds :)

Cake Ingredients

Makes two 20cm round cakes 

100g of light muscovado or light brown sugar
250ml of oil
3/4 tsp bicarbonate soda, for extra fluffy cake
2 tsp of baking powder
4 medium eggs
2 large carrots, finely grated
zest of 1 mandarin or 1/2 an orange
zest of 1/2 a lemon
300g of plain flour
1/2 tsp of salt
2 tsp of cinnamon
2 tsp of cardamon
1/2 tsp of ground ginger
walnuts for the top (optional)

Baking Time!
  1. Preheat the oven to 200C.
  2. Butter the cake pans. Line the bottom of the pan with baking paper. Flour the sides. 
  3. Beat the sugar and oil together until smooth. 
  4. Add one egg at a time and combine well. 
  5. Add the flour, baking powder, baking soda, spices, citrus zest and salt. 
  6. Mix well and then remove the mix from the standing mixer or stop using an electric mix. 
  7. Fold the carrots in with a spatula without removing too much air. 
  8. Evenly distribute the mixture into the cake pans. 
  9. Bake for 30-35 minutes in the middle of the oven. Both pans should be on the same level. 
  10. The cake will be done when a knife comes through cleanly. The sides of the cake should come in a bit too. 
  11. Cool the cake in the tin to help maintain their shape. Cooling takes about 30 minutes. 


Frosting Ingredients  

220g of unsalted butter, at room temperature
220g of cream cheese, at room temperature 
500g of icing sugar
2 tsp of vanilla essence or extract
1 tsp of vanilla
1/2 tsp of salt
1 tbsp of honey 

Process
  1. Cream together the butter and cream cheese. 
  2. Use a medium speed on a standing mixture or high on a hand mixer for about 5 minutes. 
  3. The finished produced should be smooth, airy and a lighter colour than the original mixture. 
  4. Slowly add the icing sugar to prevent spillage. 
  5. Add the honey, milk, vanilla, honey and salt. Mix well. 
  6. When you have finished the frosting should be thick and be able to hold a peak. 
When the cake have cooled, frost them with the buttercream. Sprinkle on some cinnamon and add the walnuts on top.





Asparagus and Edamame Risotto with Parmesan


Risotto is a fantastically filling meal that even when vegetarian, whilst satisfy most meat lovers. As a student, I make versions of risotto very often. They are incredibly filling and can be reasonably adjusted to suit any time of year. People seem to be under the misconception that putting together a risotto is difficult. In truth, it just takes patience and a commitment to stirring. This particular risotto is a twist on one of the first risottos I ever had. My grandpa 'morfar' made me this exact recipe but with just asparagus. The lemon zest really breaks through the creamy decadence of this dish, giving the entire dish great flavour dimension. Feel free to use just asparagus, but the edamame, whilst similar in texture, has as added sweetness that is lovely in this dish.  

Ingredients | Serves 2-3. Approximate cooking and prep time: 40 minutes

125g of asparagus
125g of edamame
1/2 yellow onion
2dl risotto rice
100ml dry white wine
400-500ml vegetable stock
1 tsp finely chopped lemon peel
2 tbsp butter or oil
1dl grated vegetarian parmesan
salt and white pepper


Preparation
  1. Cut or break off the bottom woody bits of the asparagus. 
  2. Cut off the tops of the asparagus and set them aside. 
  3. Cut the rest of the asparagus into small, bite-sized pieces
  4. Finely chop the onion and saute it in a large pan together with the asparagus. 
  5. Add the rice and gently saute for just 1-2 minutes. 
  6. Lower the temperature and then add the wine, let it cook into the rice. 
  7. Pour in 1/3 of the vegetable stock and let it cook into the rice. 
  8. Continue to add vegetable stock until it has all cooked into the rice. There should just be a minimal amount of liquid at the bottom of the pan. The total process should take about 20 minutes; however, if you double or triple the recipe, the process will take double, triple the time. 
  9. If you find that the rice is not fully cooked, add more vegetable stock and repeat the process. 
  10. When you feel the risotto is just about finished (ca. 3 minutes) add the edamame and asparagus heads. 
  11. Risotto is done when it loose and creamy but not wet. 
  12. Add the butter, lemon peel and parmesan. Leave out the parmesan to make this recipe vegan. 
  13. Add salt and white pepper to taste. 
  14. Serve!







Chai Spiced Cupcakes


These cupcakes are a delicious treat and a great dessert for any chai lover! Chai is one of my favourite hot drinks. Before I started drinking coffee it was the only think I ordered at Starbucks. Since then I have even tried making my own homemade chai. I can safely say homemade is best. However, store bought chai mix is great for these cupcakes. If you are making your own chai, make sure to use the tea before you add the milk. If you need to convert these measurements into US units click this link. It provides conversions for pretty much any ingredient you will need as well as the baking temperature. The base of this recipe is from Natasha's Kitchen . The addition of the baking soda and greek yoghurt makes these cupcakes super light and fluffy.

Ingredients 

Cupcakes:


170g of flour
200g caster sugar
85g of softened butter (cut into small cubes)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 large egg
1 large egg white
1/2 tsp of vanilla extract
245g of greek yoghurt
1 tbsp of cinnamon
1 tbsp of cardamon

Frosting:

120 ml of boiling water
2 chai capsules or teabags
170g unsalted butter
375g of icing sugar
1/8 tsp of salt
200g of cream cheese, softened

Baking Time!
  1. Preheat the oven to 180C. 
  2. Whisk together the dry ingredients (flour, baking powder, baking soda, salt and sugar). 
  3. Add the softened butter and whisk together for about 3-4 minutes or until the butter has been fully incorporated and the mix looks like small crumbs. 
  4. In a separate bowl, whisk together the wet ingredients (vanilla, eggs and greek yoghurt) until smooth on a medium speed. 
  5. Add the wet ingredients into the dry ingredients. 
  6. Add the cinnamon and cardamom; fold in until well incorporated. 
  7. Bake in the oven for 18-25 minutes. Check using a toothpick to make sure they have baked all the way through. 
  8. Let cool on a cooling rack. They need to be at room temperature before you frost them. 
Frosting 
  1. For the chai mixture boil 120 ml of water. 
  2. Add the boiled water into a cup with two chai capsules or two chai tea bags. 
  3. If you are using the capsules make sure to stir and dissolve the powder. 
  4. Allow the mixture to cool before adding it to the frosting. 
  1. Cream the butter until it is light and fluffy, on a high speed. It should be a few shades lighter yellow. 
  2. Add the cream cheese and combine with the butter. 
  3. Add the icing sugar, a little bit at a time until it is well incorporated with the butter and cream cheese. 
  4. Whisk on high until you can form peaks with the frosting and the whisk leaves a trail. 
  5. Pour in the cooled chai into the frosting and incorporate on a slow speed. 
  6. If you feel the chai has made the frosting too runny, you can add a little more icing sugar until you regain the the right consistency. 
  7. This should make a liberal amount of frosting for 15 cupcakes or a perfect amount for a large cake. Any left over frosting can be kept in the fridge or freezer. 

Makes 15 cupcakes. Approximate prep time: 30 minutes. Approximate baking time: 18-25 minutes. 




Strawberry and Spinach Salad



You can always use more strawberries or less strawberries depending on the ratio you like. An alternative to almonds would be pecans or walnuts. This recipe is super easy and a delicious side - a great accompaniment to meat, fish or grilled halloumi. Whichever way you want to enjoy this salad it is a big favourite in my house. This salad reminds of so much of summer barbecues and being with family. 

Serves 4-5 people. Approximate "cooking time" 10 minutes. 


Ingredients


300g of spinach 
300g of strawberries 
100g of almonds, slivered or cut 
balsamic vinegar for drizzling (white or regular) 
extra virgin olive oil for drizzling  
salt and pepper 

Preparation
  1. Toast the almonds on a medium-high heat until browned. 
  2. Let the almonds cool. 
  3. Cut the strawberries into quarters or halves depending on preference. 
  4. Take the stems of the spinach. 
  5. Combine the ingredients and drizzle with balsamic and the extra virgin olive oil. 
  6. Add salt and pepper to taste. 
  7. Serve!






Easy Breakfast: Greek Yoghurt, Honey, Almond Bars and Banana


If you find your are out of cereal one morning, using a breakfast bar instead is a quick replacement. It may not be economically to be buying cerebral bars to put on cereal; however, it serves as an excellent replacement. This recipe is super easy, and the benefit of using a cerebral bar is you can limit your sugar intake but adding a fixed serving size. The honey and banana provide a great kick of sugar to start your morning as well. Best of all, it is filling enough to keep you going until lunchtime.

Ingredients 

100-200g of greek yoghurt
1 almond bar (I used nature valley almond bars), chopped or cut into small pieces
1 banana
Honey for drizzling


Spiced Carrot Cake Cupcakes with Cream Cheese Frosting

Nigella captured my heart when I as a little girl. People joke about her over-the-top sensuality and rather ridiculous descriptions of her food. I find that despite her rich vocabulary, her food is still simple, easy to follow and definitely not unapproachable. The warmth in her personality certainly adds to the warmth of her food. When I finally have my own flat, I hope to have an entire room dedicated to cookbooks just like hers. I may have to settle for a bookshelf though.

This cupcake recipe is from one of my favourite cook books, Nigella's "How to be a Domestic Goddess." I got the book for a bargain at a charity shop. Charity shops are an excellent place to find cook books without having to pay £20+ for one. I have slightly adapted the spices for the cake as well as omitting any raisins or nuts. If you are a fan of raisins or nuts, feel free to mix them in with the carrots. You should coat them in a bit of flour before adding them to the mixture to prevent them from sinking during the bake.  White chocolate chips would also be a deliciously decadent addition to this this recipe.
