Strawberry and Spinach Salad

You can always use more strawberries or less strawberries depending on the ratio you like. An alternative to almonds would be pecans or walnuts. This recipe is super easy and a delicious side - a great accompaniment to meat, fish or grilled halloumi. Whichever way you want to enjoy this salad it is a big favourite in my house. This salad reminds of so much of summer barbecues and being with family. 

Serves 4-5 people. Approximate "cooking time" 10 minutes. 


Ingredients


300g of spinach 
300g of strawberries 
100g of almonds, slivered or cut 
balsamic vinegar for drizzling (white or regular) 
extra virgin olive oil for drizzling  
salt and pepper 

Preparation
  1. Toast the almonds on a medium-high heat until browned. 
  2. Let the almonds cool. 
  3. Cut the strawberries into quarters or halves depending on preference. 
  4. Take the stems of the spinach. 
  5. Combine the ingredients and drizzle with balsamic and the extra virgin olive oil. 
  6. Add salt and pepper to taste. 
  7. Serve!
