Healthy and Delicious Banana Bread (No added oil or sugar)


I've always heard that banana bread is just as good without added sugar because over ripe bananas are just so sweet. I have the biggest sweet tooth on the planet or at least second to my dad. So unsurprisingly I have been skeptical of banana bread with no added sugar. However, I have really been craving something more exciting than just plain toast for breakfast, so I thought I would give it a try. This banana bread can be made sweeter with a tbsp of honey and some chocolate chips (I added the chocolate as you can tell). Honestly though, you don't need either one. If you feel like you want the honey then go ahead and add it or drizzle some one the finished, baked product. I tried this recipe out on my family and a few friends. The general consensus was that no one believed it was healthy. This banana bread is still super sweet and packed full of potassium. I'm kind of craving some now. Too bad I don't have any bananas at home. Crap.

FYI: If you have a nut allergy, the almond meal can be substitute with just more regular, plain, old, white flour.



Ingredients










2.5 dl or 2 (US) cups of plain flour
2.5 dl or 2 (US) cups of almond flour/meal
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
10 pitteded dates
8 very ripe bananas
2 eggs

Optional:
1 tbsp of honey
a handful of dark chocolate chips

Preparation

  1. Preheat your oven to 150C or 300F. 
  2. Prep a loaf tin with baking spray and line with baking/parchment paper. 
  3. Add your dates, bananas and honey (if using) into a food processor or blender. Pulse until almost smooth. A few lumps of banana will make for a lovely texture once baked. Alternatively, you can mush your bananas with a fork and finely chop your dates. 
  4. Pour your wet ingredients into a large bowl. 
  5. In a smaller bowl combine all of your dry ingredients (baking powder, baking soda, salt, cinnamon and flours). 
  6. Add 1/3 of the dry ingredients into the larger bowl with the wet ingredients. Combine with a spatula taking care not to over mix. Then add one egg. Combine. Add another 1/3 of the dry into large bowl. Then the last egg. 
  7. Finally add the final 1/3 of flour and combine with the spatula. 
  8. If you are using chocolate chips toss them in some plain flour, then fold into the mixture as well. Take care not to add too much additional flour.
  9. Gently pour or spoon the banana bread mix into the prepared loaf tin. 
  10. Bake for 60-70 minutes in the centre of the oven until fully golden and fully baked. A toothpick should come out clean from the middle. 
  11. If around 30 minutes you feel the banana bread is browning too quickly, simply cover the loaf with some aluminium foil. 
  12. Enjoy as is or lightly toasted! I like mine with fresh raspberries. Cream cheese is a naughtier but delicious topping too!




Vanilla Porridge with Warm Berries



Serves 1 / Approximate prep time 5 minutes 

This porridge is perfect for this time of year. I would say that it reminds me of crumble. Obviously the lack of butter and sugar makes it not a crumble and no where near as delicious. Fortunately, these ingredients are perfect for breakfast! Liven up your porridge with this recipe :)



Ingredients 

100ml of oats
200ml of milk (any kind)
1 tsp vanilla extract or vanilla sugar
a handful of fresh or frozen berries
a sprinkle of sea salt (optional).
a sprinkle of granola or toasted nuts


Preparation 

  1. Combine your oats and water in a microwave safe bowl. Microwave for 2 minutes. 
  2. Add your vanilla extract and mix. 
  3. Heat your berries in the microwave or on the stove until warm and slightly softened. 
  4. Top your porridge with the fruit. Sprinkle on your toasted nuts or granola and a bit of sea salt. The salt helps balance out the sweetness and should not actually taste salty. 
  5. Enjoy! 


Peanut Butter and Banana Porridge


Serves 1 / Approximate prep time 5 minutes 

I know it sounds weird, but if you are a fan of peanut butter you will enjoy this porridge. It is reminiscent of oatmeal cookies but obviously much healthier. I usually have my porridge this way for breakfast when I am working a lunch shift because it so filling and provides protein. You can substitute the peanut butter for any other nut better and I am sure that would be equally delicious. I can image the nutella would be delicious though more decadent.



Ingredients 

100ml of oats
200ml of water
1 banana, half mashed and half sliced
1 level tbsp of all natural peanut butter, unsalted and unsweetened
a sprinkle of sea salt
honey or agave syrup (optional)

Preparation 

  1. Combine your oats and water in a microwave safe bowl. Microwave for 2 minutes. 
  2. Add your peanut butter and mashed bananas to the porridge and mix. 
  3. Top your porridge with the remaining banana. Drizzle on some sweetner and sprinkle on the sea salt. Sprinkle on some granola for added crunch (optional). 


Quick Banana, Fig and Almond Porridge

Serves 1 / Approx. cooking time 2 minutes 



Ingredients 

100ml of porridge oats
200ml of milk of any kind
4 dried figs, diced
about 10 almonds (or to your taste), roughly chopped
half a banana, mashed
1/2 tsp vanilla extract or vanilla sugar
1/2 tsp cinnamon or cardamon
pinch of salt

Serve with: honey, greek yoghurt and granola.


Preparation 

  1. Combine your oats, salt and milk in a bowl. Microwave for 2-2 1/2 minutes and then stir. Alternatively cook on your hob/stove on a low simmer for about 10 minutes. 
  2. As soon as the porridge has finished cooking, add the figs, almonds and mashed bananas. 
  3. Add the spices a little bit at time, adjust if you want a strong flavour. 
  4. Serve with a dollop of greek yoghurt, a drizzle of honey and a sprinkle of granola. 
  5. Enjoy! 

Fluffy Oatmeal Pancakes



These pancakes do taste healthier than regular pancakes, but they are very fluffy and tasty! Plus they are very filling. I paired mine with a banana and some heated up frozen raspberries.

Ingredients 

120g of whole wheat flour
40g of porridge oats
a pinch of salt
1 tsp of cinnamon
1 tsp of cardamon
1 egg
240ml of milk
2 tablespoons of brown sugar
60g of greek yoghurt or creme fraiche
1 tsp of vanilla

Preparation 

  1. Combine the dry ingredients: flour, oats, salt, cinnamon, vanilla and cardamon. 
  2. In a separate bowl, combine the milk, egg, brown sugar and yoghurt. Make sure it has no lumps. 
  3. Add the wet ingredients into the dry ingredients and fold in gently. 
  4. Let the mixture sit for 5-10 minutes to soften the oats. 
  5. Heat to a medium/high heat about a tsp of butter or oil in a frying pan, add about 100ml of mixture for one pancake. You can do more than one of a time if you can multi-task. 
  6. Add chocolate chips, blueberries, banana, etc. if you wish at this point. 
  7. Let the pancake cook for approximately 2 minutes per side or until golden. 
  8. Serve with fruit, greek yoghurt, honey or whatever topping you like.
  9. Enjoy :) 
Makes approximately 8 pancakes. Cooking time 20 minutes.
