Light Parsley and Pita Crusted Fish
Ingredients
4 firm white fish fillets (tilapia, cod, etc.)
1 lemon, peel and half a tablespoon of juice
50g or one whole wheat pita bread
1 small handful of fresh parsley
Serve with sweet potato crisps and some greek yoghurt.
Preparation
- Preheat the oven to a high grill.
- In a food processor, combine the pita, lemon peel and parsley.
- Put the fish on a lined baking tray.
- Combine the lemon juice and olive oil and then drizzle on top of the fish.
- Sprinkle the bread mix on top of the fish.
- Bake in the oven for 5-7 minutes.
- Serve and enjoy!
