Light Parsley and Pita Crusted Fish

This fish dish is so easy to prepare and so fresh, perfect for the spring! Make sure to check out the sweet potato crisps to serve along side it.

Ingredients 

4 firm white fish fillets (tilapia, cod, etc.)
1 lemon, peel and half a tablespoon of juice
50g or one whole wheat pita bread
1 small handful of fresh parsley

Serve with sweet potato crisps and some greek yoghurt.

Preparation
  1. Preheat the oven to a high grill. 
  2. In a food processor, combine the pita, lemon peel and parsley. 
  3. Put the fish on a lined baking tray. 
  4. Combine the lemon juice and olive oil and then drizzle on top of the fish. 
  5. Sprinkle the bread mix on top of the fish. 
  6. Bake in the oven for 5-7 minutes. 
  7. Serve and enjoy!
