Easy Chicken Noodle Soup
This soup is perfect for any sick or rainy day. It is warm, comforting and filling. I did not have any broccoli at home, but I think it would have made a great addition. Hope you try out the recipe :)
Ingredients
1 large carrot, finely shaved using a peeler
200g of cooked chicken or quorn chicken pieces
2 squares of dried egg noodles
3 spring onions
1 tsp of honey or sugar
4 tsp of soy sauce
1 tsp of corn flour
2 tsp of ginger (fresh or dried)
250mL of stock (beef)
1 tsp of Chinese five spice
1 sprinkle of fresh coriander
Cooking Time!
- Put the stock in a pan.
- Add the ginger, Chinese five spice, soy sauce and sugar or honey. Stir.
- Bring to a boil.
- Mix the cornflour with 2 tsp of cold water. Add to the pan and stir.
- Add 1L of boiling water and stir. Keep at a boil.
- Add the chicken, noodles, spring onion and carrot.
- Keep at a rapid simmer for 3-5 minutes depending on your noodle packet's instructions.
- Serve with a sprinkle of fresh coriander.
