Swedish Gingerbread Cake

Ingredients 

2 eggs
300ml of sugar
300ml of flour
2 tsp of baking powder
4 tsp of cinnamon
2 tsp of cardamom
150ml of milk
100g of unsalted butter

Preparation 

  1. Preheat the oven to 175C. 
  2. Cream together the sugar and butter. 
  3. Add the eggs one at a time, whisking into the cream and butter. 
  4. Add the milk and combine. 
  5. Sift in the flour and baking powder. 
  6. Add the cinnamon and cardamom.  
  7. Whisk everything together until well combined and airy. 
  8. Pour into a butter and floured cake tin. I used a bread tin, but a normal cake dish would be fine as well!
  9. Bake in the oven for 30-35 minutes. 
  10. Serve as is or with cream cheese or even some applesauce. 
  11. Enjoy!
