Swedish Gingerbread Cake
Ingredients
2 eggs
300ml of sugar
300ml of flour
2 tsp of baking powder
4 tsp of cinnamon
2 tsp of cardamom
150ml of milk
100g of unsalted butter
Preparation
- Preheat the oven to 175C.
- Cream together the sugar and butter.
- Add the eggs one at a time, whisking into the cream and butter.
- Add the milk and combine.
- Sift in the flour and baking powder.
- Add the cinnamon and cardamom.
- Whisk everything together until well combined and airy.
- Pour into a butter and floured cake tin. I used a bread tin, but a normal cake dish would be fine as well!
- Bake in the oven for 30-35 minutes.
- Serve as is or with cream cheese or even some applesauce.
