Quick Banana, Fig and Almond Porridge

Serves 1 / Approx. cooking time 2 minutes 



Ingredients 

100ml of porridge oats
200ml of milk of any kind
4 dried figs, diced
about 10 almonds (or to your taste), roughly chopped
half a banana, mashed
1/2 tsp vanilla extract or vanilla sugar
1/2 tsp cinnamon or cardamon
pinch of salt

Serve with: honey, greek yoghurt and granola.


Preparation 

  1. Combine your oats, salt and milk in a bowl. Microwave for 2-2 1/2 minutes and then stir. Alternatively cook on your hob/stove on a low simmer for about 10 minutes. 
  2. As soon as the porridge has finished cooking, add the figs, almonds and mashed bananas. 
  3. Add the spices a little bit at time, adjust if you want a strong flavour. 
  4. Serve with a dollop of greek yoghurt, a drizzle of honey and a sprinkle of granola. 
  5. Enjoy!
