Thai Stir-Fry Lime and Coconut Chicken

Ingredients

2 chicken breasts or tenderloins or 250g vegetarian chicken substitute such as quorn chicken
1 lime, zest and juice
140ml of coconut milk
1 heaped tsp of fish sauce
1 green chilli, deseeded
4-5 tbsp of fresh coriander, 2 for the sauce, 2-3 for on top
4 spring onions (green and white parts)

Cooking Time! 

  1. Chop the chicken into bite sized pieces and marinade in the lime zest and juice for an hour. 
  2. Brown the chicken in olive and a dash of sesame oil. Do NOT add the lime juice. 
  3. Finely dice chilli and chop the coriander. Add to the chicken and fry for about a minute. 
  4. Add the lime juice and zest, chopped spring onion, fish sauce and coconut milk.
  5. Finally, serve with rice and sprinkle on the remaining coriander. 
  6. Enjoy!
Approximate cooking time 20 minutes (not including the marinading time). Serves 2.
