Thai Stir-Fry Lime and Coconut Chicken
Ingredients
2 chicken breasts or tenderloins or 250g vegetarian chicken substitute such as quorn chicken
1 lime, zest and juice
140ml of coconut milk
1 heaped tsp of fish sauce
1 green chilli, deseeded
4-5 tbsp of fresh coriander, 2 for the sauce, 2-3 for on top
4 spring onions (green and white parts)
Cooking Time!
- Chop the chicken into bite sized pieces and marinade in the lime zest and juice for an hour.
- Brown the chicken in olive and a dash of sesame oil. Do NOT add the lime juice.
- Finely dice chilli and chop the coriander. Add to the chicken and fry for about a minute.
- Add the lime juice and zest, chopped spring onion, fish sauce and coconut milk.
- Finally, serve with rice and sprinkle on the remaining coriander.
- Enjoy!
Approximate cooking time 20 minutes (not including the marinading time). Serves 2.
