Spinach Twist on Lasagne al Forno

Lasagne is my absolute favourite food, and as hard as I try I can never make it taste like my mum's. I think I just add to much seasoning because I am a full on flavour kind of girl. My mum is far more for simple but excellent flavours. Spinach is also a fun way to make the lasagne look prettier, but it is also a great way to get some more dark, leafy greens into your diet. I think my mum would probably cringe at me not making my own bechamel sauce; however, store bought is great if you are dinner quicker.

Serves 6. Approximate cook and prep time: 1 hour and 30 minutes. 

Ingredients 

12-18 sheets of lasagne pasta
470g bechamel sauce or white lasagne sauce 
2 large mozzarella balls 
50g of parmesan or vegetarian parmesan 
Approx. 100g of fresh, baby spinach 

Mince - classic bolognese sauce 

2 tbsp of olive oil 
1 yellow/brown onion 
2 garlic cloves
2 medium carrots
500g of beef or quorn mince 
2 tbsp of tomato paste 
500 ml of tinned and chopped tomatoes 
5 tsp of Henderson's Relish or Worcestershire sauce 
1 tsp of soy sauce 
1/4 tsp of cayenne pepper
1/2 tsp of paprika 
1 tbsp of ketchup 
1/2 tsp of chilli flakes 
1/2 tsp of cumin 
1 tsp of dried basil 
1 tsp of oregano 
Cheese for topping (parmesan, cheddar) 
Salt and pepper, to taste  

Cooking Time!

Mince 
  1. Sauté the onion, garlic and bacon on a medium heat in the olive oil. 
  2. When the onions and garlic have softened add the mince. 
  3. Brown the mince and then season to taste with salt and pepper. 
  4. Add the tomato paste and combine well with the meat. Check the seasoning again. 
  5. Add the tinned tomatoes and carrots and bring to a light simmer. 
  6. After approx. five minutes season again with salt and pepper. 
  7. Add the soy sauce, Henderson's relish, ketchup and spices. 
  8. Season with salt and pepper if necessary. 

Assemble

  1. Preheat the oven to 200C. 
  2. Add 1/2 of the mince sauce on the bottom of a medium-large oven dish. 
  3. Add 6 pasta sheets, evenly on top of the mince sauce. You may need more depending on the size of the sheets and the width and height of the dish. There should be two layers of pasta sheets. 
  4. Add 1/2 of the bechamel sauce, then top with 1/2 of the mozzarella. 
  5. Top with 1/2 of the fresh spinach. 
  6. Repeat until the dish is full. 
  7. The top layer should be the bechamel sauce, spinach and mozzarella. 
  8. Grate the parmesan on top. 
  9. Bake for 30-35 minutes or until the top is golden. 
  10. Serve with salad. 

 Salad 

For the salad toss together a handful of spinach, 10-12 cut cherry tomatoes, about a 5 cm long piece of cucumber cut into cubes and drizzle with balsamic vinegar and extra virgin olive oil. Add sea salt and pepper to taste.
