Super Quick | Warm Plum and Feta Salad
This salad is incredibly simple yet a fantastic light meal or starter for summer. It looks quite impressive served up, but really it couldn't be easier to make. If you have a grill, lightly grilling the plums would be a great alternative.
Ingredients Per Person
3 small plums, cut in half with pits removed
40g of feta
your choice of toasted nuts, roughly chopped
a small handful of rocket/arugula
balsamic vinegar (a glaze would work best)
salt and pepper to taste
butter for frying
one piece of toast
Preparation
- Heat a pan on medium high heat. Add a small knob of butter and allow to melt fully.
- Place the plum halves into the pan. Fry skin side up for 2-5 minutes or until golden. Fry for about 1 minute skin down just to warm through.
- Top the toast with a small handful of rocket.
- Place the plums on top, and crumble on the feta.
- Garnish with nuts, drizzle on some balsamic vinegar and season with salt and pepper.
