Super Quick | Warm Plum and Feta Salad

This salad is incredibly simple yet a fantastic light meal or starter for summer. It looks quite impressive served up, but really it couldn't be easier to make. If you have a grill, lightly grilling the plums would be a great alternative.



Ingredients Per Person

3 small plums, cut in half with pits removed
40g of feta
your choice of toasted nuts, roughly chopped
a small handful of rocket/arugula
balsamic vinegar (a glaze would work best)
salt and pepper to taste
butter for frying
one piece of toast

Preparation 

  1. Heat a pan on medium high heat. Add a small knob of butter and allow to melt fully. 
  2. Place the plum halves into the pan. Fry skin side up for 2-5 minutes or until golden. Fry for about 1 minute skin down just to warm through. 
  3. Top the toast with a small handful of rocket. 
  4. Place the plums on top, and crumble on the feta. 
  5. Garnish with nuts, drizzle on some balsamic vinegar and season with salt and pepper. 
  6. Enjoy!
