Spanakopita | Spinach and Feta Pie
Ingredients
1 onion, minced
3-4 spring onions
2 garlic cloves, minced
100g of spinach
2 eggs
1 tbsp of cream cheese
1 tbsp of greek yoghurt
black pepper
1 pack of filo pastry (250g)*
* You can use puff pastry but the traditional pastry is filo. If you are using puff pastry you will need two sheets. One for the top and one for the bottom. Make sure to blind bake the bottom layer for 12 minutes.
Cooking Time!
- Preheat the oven to 175C.
- Saute the spring onion, onion and garlic clove in some olive oil.
- Once they have softened, add the spinach and continue to saute for 2 minutes.
- You will know it is done when all the spinach has wilted.
- In a bowl combine the egg, cheese and yoghurt.
- Season the mixture with pepper.
- Add the spinach, onion and garlic to the egg-cheese-yoghurt mix.
- Brush one sheet of filo with olive oil. Then drape it, oil side down on the pie dish.
- Keep doing this until you have used up all the pastry.
- Add the filling to the dish.
- With the sides hanging over the side of the dish, fold them over to cover the filling.
- Bake for approximately 40 minutes or until the top of the pie is completely browned.
